Zusammenfassung

Proteine sind eine ziemlich vielfältige Gruppe von Polymeren. Aus diesem Grund teilt dieses Buch Proteine in drei Kapitel ein – das Kapitel hier über Proteine aus Algen und Wasserpflanzen, ein Kapitel über Kollagen (Kap. 12) und ein drittes Kapitel über Enzyme (Kap. 11). Proteine aus Wasserpflanzen und Algen sind von besonderer Bedeutung, da sie eine Quelle für Pflanzenproteine darstellen, für deren Anbau kein Land benötigt wird. Da die Nachfrage nach Protein für die Ernährung parallel zur globalen Bevölkerung steigt und Ackerflächen aufgrund von Desertifikation und Wohnraumbedarf abnehmen, ist eine alternative Möglichkeit, Protein zu produzieren, in der aquatischen Umgebung. Zu diesem Zweck überprüft dieses Kapitel den Prozess der Extraktion von Proteinen aus Wasserpflanzen und Algen und diskutiert die Umwelt- und Wirtschaftsbedeutung. Dabei werden auch die Chemie und Anwendungen diskutiert.
